The .vmx file can be found in the VM's folder where all the VM's files are stored. You can edit this file with e.g. notepad. Btw. in your initial post you mentioned ESXi 5.x, but in the latest one it's ESXi 6.0 what you are trying to install. Anyway, for ESXi 6.0 you may use "vmxnet3" instead of "e1000" as the adapter type.
