Best Process for P2V for OS X Server (ESX 5.5)

We have purchased some new Mac Pro hosts for use with our VMWare environment and we want to convert some physical Mac servers to VMs. I am currently planning on following this process:

1. Create new VM based on same version of OS X as source.
2. Create a backup of source drive via SuperDuper or Time Machine.
   1. Alternatively, connect source machine to VM
3. Use the Migration Assistant to Migrate source physical to destination VM

Is this a sound process? Does anyone have further ideas or know of any pitfalls with this approach?
