Because IMO a Lab consisting of what you presented thus far, and assuming it runs 24/7/365 then ESXi is the way to go. If this is something that's just going to run once in a while then VMware Fusion would probably do and you can certainly test it out for free using the VMware Fusion fully functional and free 30 day trial license key that is automatically downloaded to the VMware Fusion install when selecting to run it in trial mode. If it doesn't suite your needs then the VM's can be migrated to ESXi, no need to rebuild from scratch.
